Nấu sôi 900ml nước. Trộn đều bột rau câu với 200gr đường trong tô.
Khi nước đã sôi, cho rau câu và đường đã trộn vào nồi, khuấy tan. Hạ lửa cho sôi liu riu.
Cho 1 muỗng cà phê bột cacao vào chén nhỏ. Pha khoảng 2 muỗng canh nước rau câu, khuấy tan. Cho ít rau câu cacao vào khuôn làm tròng đen.
Pha 1 giọt màu thực phẩm xanh với 4 muỗng canh nước rau câu. Khuấy đều rồi cho vào khuôn để làm tròng ngoài của mắt. Thực hiện tương tự với màu thực phẩm đỏ.
Khi lớp rau câu màu đã khô mặt, pha sữa đặc với nước rau câu sao cho có màu trắng đục. Rót phần rau câu này vào khuôn rồi để nguội. Cho vào ngăn mát tủ lạnh khoảng 1 tiếng là được.
Sau 1h, chỉ việc lấy rau câu nhãn cầu ra đĩa là hoàn tất món tráng miệng hay ho cho Halloween rồi. Rau câu này dùng làm món tráng miệng hay thả vào trong ly cocktail Halloween để tăng phần ghê rợn đều rất hợp.
